Rockefeller Oysters

Oysters Rockefeller

Ingredients for 4 to 6 people:

  • 2 dozen oysters
  • 50 gr of spring onions
  • 10 gr of finely chopped parsley including stems
  • 10 gr of finely chopped celery (optional)
  • 50 gr salted butter
  • 225 gr fresh spinach, finely chopped

Topping:

  • 75 gr of breadcrumbs
  • 25 gr of freshly-grated Parmesan cheese
  • 1 teaspoon of extra virgin olive oil
  • ¼ teaspoon of salt
  • 7 drops of chili sauce (Tabasco)
    some coarse sea salt

How to:
Take two large, round oven dishes and sprinkle a layer of coarse sea salt into them. Add a few drops of water. Clean the oysters in the shell under a running tap with cold water. Open the oyster and cut the oyster from the shell. Take the deep, rond parts of the shells and put the oyster into it. Place them on the layer of sea salt.

Preheat the oven to 230 °C.
Stir fry the spring onions, parsley and celery until the onion is soft. Add the spinach and the chili sauce.

Topping:
Mix the breadcrumbs, Parmesan cheese and the olive oil.
Put the spinach mixture on top of the oysters and add the topping to taste.
Bake this in the oven for about 8-10 minutes to a light, crispy golden brown.

Enjoy with a nice glass of white wine!
