Grilled Farm styled oysters

Ingredients for 4 to 6 people:

2 dozen oysters

For the sauce:

  • 100 ml extra virgin olive oil
  • 125 gr unsalted butter
  • 1 tablespoon of brown sugar
  • 1 big shallot, finely chopped
  • 3 gloves of garlic, finely chopped
  • 1 red chili pepper, without the seeds, finely chopped
  • 3 tomatoes of the vine, finely chopped
  • A few sprigs of parsley

How to:
Preheat the grill to 200-220 °C.
Open the oysters carefully, making sure that the oyster juice stays in the oyster.

For the sauce:
Take a medium skillet/pan, and put the olive oil, the butter and the brown sugar in it. Slowly heat up until the butter has completely melted. Add the shallot, garlic, chili pepper and chopped tomatoes to this mix. Lower the heat and let it simmer for 10 minutes. Take the pan off the heat and put it to one side, but the sauce has to stay warm. Put 1 teaspoon of sauce on every oyster.

Once the grill is heated to 220 °C, put the oysters on the grill. If you use a Big Green Egg, close the lid for 2 – 3 minutes. Please keep an eye on them because the oysters are ready before you know it. When the sauce and oyster liquid are bubbling, they are ready to serve. Garnish with some parsley and bon appétit!
